#141 / Vegan Matcha Gâteau au Chocolat / ヴィーガン 抹茶ガトーショコラ














* 薄力粉 50g

* アーモンドパウダー 30g

* 抹茶パウダー 大1

* ベーキングパウダー 小1/4

* 塩 小1/8


* カカオバター(溶かす) 50g

* メープルシロップ 大3

* 豆乳 大3

* 豆乳ホイップクリーム 適量


1. 型にクッキングシートをしいておく。

2. オーブンを180度に予熱する。

3. DRYをボールにふるい入れる。

4. WETを加えて混ぜ、型に入れる。

5. 180度のオーブンで25-30分、串を刺して生地がつかなくなるまで焼く。

6. 粗熱を取ってカットし、クリームを添える。



* 豆乳 100cc

* レモン汁 小1/2

* バニラエキストラクト 小1/2

* 粉砂糖 大1

* 無香料ココナッツオイル(溶かす) 80g


1. ブレンダーに豆乳、レモン汁、バニラ、粉砂糖を入れて攪拌する。

2. ココナッツオイルをゆっくり加えながら攪拌する。

3. 冷蔵庫でマヨネーズ程度に固まるまで冷やす。


Rich and voluminous Gâteau au chocolat in which includes lots of chocolate can be a luxurious and perfect gift.

This time I made a vegan matcha version of Gâteau au chocolat, using cacao butter.

Super easy!

Chocolate and cacao butter, like coconut oil, solidify when cold, so you can carry the cake as a gift without breaking it.

It's hard when it's cold (I like it that way, but it's heavy), so I recommend heating it in the microwave or toasting it a bit before eating it, as it makes it softer and fluffier.

I like whipped cream made with coconut milk because it has a firm texture, but this time, I made it with soy milk for those who don't like the scent of coconut.

It's not hard enough to be applied to put inside for building the layered cake, but it's so easy to make and light, fluffy and creamy.


"Matcha gâteau au chocolat"

 Ingredients (12cm round tin)


* 50g cake flour

* 30g almond powder

* 1 tbsp matcha powder

* 1/4 tsp baking powder

* 1/8 tsp salt


* 50g cacao butter (melted)

* 3 tbsp maple syrup

* 3 tbsp soy milk

For decoration

* some soy whip cream


1. Preheat an oven to 180˚C. Put a parchment paper in a cake tin.

2. Sift DRY ingredients in a medium bowl.

3. Add the Wet mixture into the Dry mixture, and mix well into a smooth batter.

4. Pour into the cake tin and bake at 180˚C for about 25-30 minutes, or until a cake testing needle comes out clean.

5. Remove the cake from the oven, allow it to sit in the pan on the counter or rack for approximately 15 minutes.

6. Enjoy with soy whipped cream!

"Soy whipped cream


* 100cc soy milk

* 1/2 tsp lemon juice

* 1/2 tsp vanilla extract

* 1 tbsp powdered sugar

* 80g refined coconut oil (melted)


1. Add soy milk, lemon juice, vanilla, sugar in a blender, and blend until well combined.

2. Blend while adding slowly the melted coconut oil.

3. Transfer the liquid to a glass jar and chill in the fridge until it hardens like mayonnaise.
