#145 / Vegan Hotteok (korean rice cake) / ホットク (韓国屋台餅菓子)












白玉粉 50g

塩 小1/3

メープルシロップ 小1

熱湯 100cc

薄力粉 100g

ベーキングパウダー 小1

植物油 大1

つぶあん 大6 (水気をしっかりとり、大1ずつ丸めておく)

植物油 適量


1. 白玉粉、塩、メープル、熱めの湯をボールに入れて2分置く。

2. 1に薄力粉とベーキングパウダーを加えて混ぜ、油を加えてこねる。

3. 全体がなめらかになったら、6等分にする。

4. 手を水で濡らし、生地を軽く伸ばし、つぶあんを包む。

5. フライパンに油を多めに熱し、生地をつぶしてを入れ、計量カップの裏に油をつけて平らに押しつぶす。

6. 片面が色づいたらひっくり返し、もう片面もしっかり色づくまで焼く。


Hotteok is a very popular classic snack sold at Korean food stalls. I love it.

A glutinous and exquisite treat made of glutinous rice flour and wheat flour dough, filled with red bean paste or other fillings, and deep-fried in oil.

There are many variations inside, including brown sugar, peanut, cinnamon, and cheese.

It can be a nice sweet treat or savory treat once you mastered the dough. You can put any kind of fillings.

If you dissolve glutinous flour slowly, it will not form lumps, but don't worry if the mixture has small lumps as shown in the video. For now, mix as much as you can. Once baked, you won't mind the lumps.

There is a tool for Hotteok in Korea that stretches the dough flat when baking it. That's how popular this snack is! I use the bottom of a measuring cup. You can use a spatula or anything as long as you can crush the dough.


Ingredients (for 6 pieces)

* 50g glutinous flour

* 1/3 tsp salt

* 1 tsp maple syrup

* 100cc boiling water

* 100g wheat flour

* 1 tsp baking powder

* 1 tbsp vegetable oil

* 6 tbsp red sweet bean paste (Remove the water from the bean paste with a paper towel, and roll up 1 tbsp at a time)

* some vegetable oil for frying


1. combine glutinous flour, salt, maple syrup and hot water in a bowl and let sit for 2 minutes.

2. Add flour and baking powder and mix, then add oil and knead until smooth.

3. Divide into 6 equal portions.

4. Wet your hands with water, roll out the dough into your palm size, and wrap the sweet bean paste.

5. Heat oil in a frying pan, flat the dough and put it in the pan.

6. When one side is browned, turn over and cook until the other side is well browned.
