Chinsuko is a traditional Okinawan biscuit and one of the most popular souvenirs in Okinawa. It is made of flour, sugar, and lard.

It has a shortbread-like texture and crumbles in the mouth, giving it a rich flavor.

So, I had to make it or I wouldn't be able to eat it, so here's a vegan version.

Very few ingredients, very easy to make.

Crispy and delicious!

Be careful, because once you start eating it, you can't stop, it's so delicious.

This time I didn't use a mold, but made them by hand to make them easier to make.

This molding way increases some more surface area than making it square or round, and would produce more crunchy areas.

But you can use any shape you like, such as a standard rectangle or circle.

Ingredients (for 18 pieces)

* 150g flour

* 45g sugar

* 1/4 tsp salt

* 75g coconut oil

1. Line a baking tray with parchment paper and preheat oven to 170°C.

2. Mix flour, sugar and salt, add coconut oil and mix until combined.

3. Divide into 18 equal portions (15g each), shape into desired shape and bake in preheated oven at 170°C for 15 minutes.

4. Remove from oven and do not touch until cooled. Once cooled, place in the refrigerator to cool slightly.
