Vegan Sweet Potato Crème Brûlée
ヴィーガン サツマイモのクレームブリュレ











材料(ココット6個分, 直径9cm*深さ2cm程度の大きさのココット)

* サツマイモ(1cm輪切り)200g

* 豆乳 300cc

* 葛粉 12g

* 塩 ひとつまみ

* ココナッツミルク 100cc

* メープルシロップ 大3

* バニラエキストラクト 小1

* 砂糖 適量


1. 鍋にたっぷりの湯を沸かし、サツマイモを入れて10分程度、柔らかくなるまで煮る。粗熱をとり、皮をむく。

2. 鍋に葛粉、塩、豆乳を入れて混ぜて火にかけ、焦げ付かないようによく混ぜながら、沸いたら弱火で1分煮る。

3. 材料全てをブレンダーにかけ、なめらかにする。

4. 器に流し入れ冷蔵庫で冷やす。

5. 表面が固まった後、砂糖をふりバーナーで焼く。


It is a very delicious vegan & gluten free melting cream.

A sweet potato and soy milk based Crème Brûlée with guilt free as possible.

The crispy sugar caramelized surface is a bit difficult to make without a burner, although it is exciting to have. You can also bake it in the oven, toaster or grill to melt sugar on the surface.

But the cream is delicious enough without it.

It tastes great chilled in the fridge, cold, or eaten hot.

When you have a burner and want to caramelize it, if sprinkle it with lots of sugar it helps make it thick and evenly caramelized, but I don't like to use a lot of sugar, so I sprinkle not too much. Just a little goes a long way to make it nice.

The cream is not made too sweet, given the sweetness of the caramelization.

This sweetness gives it a solid dessert feel. So if you don't caramelize the top, you can drizzle a little maple syrup on top.


Ingredients (for 6 cocottes, 10cm diameter*2cm deep heatproof dish)

* 200g sweet potatoes (cut into 1cm slices)

* 300cc soy milk

* 12g arrowroot powder

* a pinch salt

* 100cc coconut mill

* 3 tbsp maple syrup

* 1 tsp vanilla extract

* some sugar


1. Bring a pot of water to a boil, add sweet potatoes and cook until tender, about 10 minutes. Remove from heat and peel.

2. Mix arrowroot powder, salt and soy milk in a saucepan and heat, stirring frequently to prevent burning.

3. Blend all ingredients in a blender to make it smooth.

4. Pour the mixture into a cocottes and refrigerate.

5. After the surface has set, sprinkle with sugar and grill over a burner.
