#201 Vegan matcha biscotti / ヴィーガン抹茶ビスコッティ

vegan matcha biscotti













* アーモンド90g

* オリーブオイル 60cc

* 豆乳 60cc

* 砂糖60g

* 薄力粉 170g

* 抹茶 10g

* ベーキングパウダー 小1/2

* 塩 ひとつまみ


  1. フードプロセッサーにアーモンドを入れ、5mm角程度になるまで撹拌する。

  2. オリーブオイル、豆乳、砂糖、塩、アーモンドを加える。

  3. 粉類をふるい入れ、生地を一つにまとめる。

  4. まな板の上に取り出し、12cm×20cm程度のナマコ型にする。

  5. 7mm-1cm幅程度にカットする。

  6. クッキングシートをしいたトレイに並べ、170度に予熱したオーブンで25分焼く。


You may or may not like the matcha-based sweets, but I love the aroma.

I had whole almonds and wanted to dice them, so I put them in a food processor.

If you have diced almonds, you can make biscotti without using a food processor.

You can also use sliced almonds or chop it by hand.

You can also add other nuts such as cashews or coconut flakes.

Biscotti is usually baked twice, but this time I sliced it thinly so it can be baked once.

The cocoa version is also delicious and I will put it on a short video.

I decorated the biscotti prettily with edible flowers and sugar, but it is sweet enough without them.

It would also be lovely covered with white chocolate.


Ingredients(about 25 biscotti of 12cm long)

* 90g almonds

* 60cc olive oil

* 60cc soy milk

* 60g sugar

* 170g cake flour

* 10g matcha powder

* 1/2 tsp baking powder

* a pinch of salt


  1. Place the almonds in a food processor and process until the almonds are about small dices.

  2. Add olive oil, soy milk, sugar, salt and almonds.

  3. Sift in the flour, matcha powder, and baking powder. Mix until the dough comes together.

  4. Put the dough onto a cutting board and make oval shape about 12cm x 20cm x 1cm hight.

  5. Cut into pieces about 7mm-1cm wide.

  6. Place on a baking tray lined with a parchment paper and bake in a preheated oven at 170°C for 23-25 minutes.
