The classic French toast is to soak a hard bread in a batter of eggs and milk, and bake it fluffy.

Especially for baguette, it becomes hard the next day, so it's so nice to use it for french toast. You can have a lovely weekend breakfast.

If you soak the bread in the liquid the night before and put it in the fridge, you can just bake it the next morning. It's pretty easy.

I sometimes do it even on busy weekday mornings, and that make us start happy day.

I like chickpea flour because it contain lots of protein, but if you don't have it, you can use cake flour or rice flour too.

I don't recommend starch such as potato starch, arrowroot powder, or cornstarch. They make french toasts sticky.

A nice and gorgeous french toast can be with toppings.

Custard cream, ice cream, coconut whipped cream or various jams...

Enjoy french toast just baked with hot tea or coffee.

* 16-20 slices of baguette of 1cm thin

* 50cc chickpea flour

* 200cc soy milk

* 1 tsp vanilla extract

* 1/2 tsp ground cinnamon

* 1 tbsp maple syrup

* 1/2 tsp bp

* Some vegetable oil

* Maple syrup , fresh berries, for topping

1. Put all the ingredients except for the baguette in a bowl, mix well.

2. Pour the mixture into a tray and soak the baguette for about 30 minutes until the baguettes soak almost all liquid (turn over several times)

3. Heat the vegetable oil in a frying pan, add the baguettes, and pour the excess liquid from above.

4. Bake well on both sides.

5. Decorate with maple syrup, berries and powdered sugar if you like.
