#86 / Easy, delicious and lovely berry scones (vegan & gluten free) / 簡単で美味しいベリースコーン (ヴィーガン&グルテンフリー)

* 米粉 100g

* アーモンドプードル 50g

* ベーキングパウダー 小1.5

* 塩 少々


* 白ごま油 大3

* ココナッツミルク 大3

* メープルシロップ 大2

* ビネガー 小1

* 冷凍ミックルベリー(50cc、冷凍のまま使う)


1. オーブンを180度に予熱する。オーブン皿にオーブンシートをしく。

2. Dryの材料をボールに入れ、ホイッパーでダマのないよう混ぜる。

3. Wetの材料を別の器に混ぜ、ベリーと共に2に加え、ヘラでさっくり粉気のなくなる程度に混ぜる。(ここからは手早く)

4. オーブンシートの上に3を取り出し、カードで半分にカットして重ねる。

5. これをもう一度繰り返す。

6. 厚み2cm程度に伸ばし、六等分にカットし、3cm程度間隔を空けて並べる。

7. 180度のオーブンで25分焼く。


Sometimes gluten free makes sweets difficult. It tends to be too dry, no moist.

But, this scone is nicely done. It is crispy and delicious when fresh baked, and is moist without being dry when cooled. It's delicious even if it's rebaked to crispy, and it's delicious and moist even if it's from a fridge. Really nice scone, isn't it?

It's very easy to make, and you can go to the oven in no time. Rather, the trick is to make it quickly. The point is to make it crispy without kneading it.

This time, I'm using frozen mixed berries. Please use it quickly without defrosting it.

Cooks in 10 min + baking 25 min / Difficulty : easy

Ingredients (6 scones)


* 100g rice flour

* 50g almond powder

* 1.5 tsp baking powder

* A pinch salt


* 3 tbsp vegetable oil (I use white sesame oil)

* 3 tbsp coconut milk

* 2 tbsp maple syrup

* 1 tsp apple cider vinegar

* 50cc Frozen mix berries


1. Preheat oven to 180 degrees.

2. Whisk Wet ingredients in a bowl, set aside.

3. Whisk Dry ingredients together in a medium bowl. 

4. Pour Wet mixture and berries on the Dry mixture and combine roughly just until you have the moist dough.

5. Transfer onto a baking tray lined with parchment paper.

6. Pat the dough gently until about 3cm thickness. Cut it in half with a knife and stack it. (Watch the video please)

7. Repeat 1 more times.

8. Stretch it into 2cm thickness ,cut it into six equal parts, and place them leaving about 3cm between each other.

9. Place apart each other bake at 180C for 25 minutes.
