#72 / Mizuyokan (Vegan soft azuki bean jelly, japanese confectionary in summer) / 夏のとろり和菓子 水羊羹











"材料" (4人分)

 * 粉寒天 2g

 * 砂糖 大1

 * 塩 少々

 * 水 250g

 * こしあん 150g


1. 鍋に、粉寒天、砂糖、塩、水を入れて混ぜ、火にかける。

2. 混ぜながら沸いたら中火にして、1分煮る。

3. 火からおろし、こし餡を加えて混ぜる。

4. 絶えず混ぜながら、粗熱を取る。

5. 濡らした型に流し入れ、冷蔵庫で30-60分冷やす。


Super easy and delicious japanese confectionary.

Have you ever heard “Yokan”?

Yokan is a azuki bean jelly made of azuki bean paste, agar and sugar. Simple.

Mizuyokan is made with more water than Yokan so that it is super soft.

And it is eaten only in summer.

You can buy Mizuyokan everywhere in Japan during summer but you can also make this very easily.

If you make mizuyokan softer than I do in the video, add slightly less agar

And pour into glasses, use spoon when you eat. It will melt in your mouth.

I add less sugar than normal mizuyokan that you can buy.

So you can add more sugar if you prefer but I recommend this amount of sugar because you can taste the azuki flavor more with less sugar.

"Ingredients" (for 4 persons)

* 2g agar

* 1 tbsp sugar

* a pinch of salt

* 250g water

* 150g sweet azuki paste


1. Put agar, sugar, salt and water in a pan, mix.

2. Bring to a boil while mixing, reduce to medium heat, and simmer for 1 minute.

3. Remove from heat, add azuki bean paste and mix well.

4. Let it cool down with mixing constantly. (It’s important to mixing until cool down)

5. Pour into a mold and chill in the refrigerator for 30-60 minutes.
