#90 / No knead bread ver.3 : Bagel with lemon peels & oatmeal / こねないパン第三弾 レモンピール&オートミールのベーグル






「#56 / ピタパン&ファラフェルサンド」












* 豆乳 300cc

* レモン絞り汁 大1.5

* 塩 少々

* ココナッツオイル(溶かす) 大2

* メープルシロップ 大1


* ドライイースト 2g

* カッテージチーズの液体 or ぬるま湯 160cc

* メープルシロップ 小1

* 強力粉 200g

* 全粒粉 50g

* 塩 小1

* レモンピール(刻む) 大2

* オートミール 約1カップ



1. (スイートカッテージクリーム)鍋に豆乳を沸かして火を止め、レモン汁を入れて混ぜ、濾す。

2. 固形部分にココナッツオイルとメープルシロップを加えてよく混ぜ、冷蔵庫で冷やす。

3. 液体部分をパン生地用に160cc計る。

4. (パン生地)ボールにドライイースト、液体、メープルシロップを入れて混ぜ、粉、塩、オリーブオイルを加えて混ぜ、まだらでない程度になったらジップロックなど封ができる袋にいれ、しっかり空気を抜く。一晩冷蔵庫に入れる。



1. まな板に手粉をふり、生地を取り出し、丸めて六等分し、布をかぶせて10分休ませる。

2. 15cm*5cmの楕円形のように伸ばし、レモンピールを入れて巻き、巻き終わりをとじる。片側の端をつぶし、ドーナツ型にとじる。布をかぶせ、乾燥しないようにし、約40分発酵暖かいところでさせる。

3. その間にオーブンを200度に予熱し、フライパンにたっぷりの湯を沸かしてメープルシロップを入れる。

4. ベーグル生地を入れて30秒茹で、裏返して再度30秒茹でる。

5. ベーグルの水気を布でとり、オートミールをまぶしてオーブンの天板に置く。

6. 200度のオーブンで15-20分、キツネ色になるまで焼く。


The night before, I make soy cottage cheese. And then with the liquid of the cottage cheese I make the bagel dough. And ferment it overnight.

So, this is the no knead and ferment overnight version.

If you want to make and eat immediately, you can. Make the cottage cheese on the day and knead the bread dough with the liquid. Or you can make it just using water. After then, put it in a bag, remove the air, ferment it at 35 degrees for about 40 minutes, and proceed as it is.

This bagel is soft and fluffy, easy to eat for both children and the elderly.

But if you like hard bagels, use 150cc water, knead well, and set the fermentation time to 25-30 minutes.

This time, I make sweet cottage cheese cream paste and applied to bagels.

I squeeze the cottage cheese very well and use the liquid. By adding coconut oil, you can make a creamier paste.

You can use this cottage cream not only for bagels, but also for bread, scones, pancakes, etc.




(Sweet cottage cheese)

* 300cc soy milk

* 1.5 tbsp lemon juice

* A pinch of salt

* 2 tbsp melted coconut oil

* 1 tbsp maple syrup

(Bagel dough)

* 2g dried yeast

* 160cc cottage cheese liquid or lukewarm water

* 1 tsp maple syrup

* 200g all purpose flour

* 50g whole wheat flour

* 1 tsp salt

* 2 tbsp chopped lemon peels

* 1 cup of oatmeal



The night before :

1. (Sweet cottage cream) Boil soy milk in a pan, turn off the heat as soon as boiled, add the lemon juice, mix and strain.

2. Add coconut oil and maple syrup to the solid part, mix well and cool in the fridge.

3. Measure 160cc of liquid part for the bagel dough.

4. (Bread dough) Put dry yeast, liquid and maple syrup in a bowl and mix well until well combined. Add flour and salt, mix well until well combined. You don’t need to knead. Put the dough into a freezer bag, bleed the air and close the bag tightly. Put in a fridge overnight.

The next day :

1. Take the dough out from the bag on a floured countertop and divide the dough into 6 pieces. Put a wet towel on the dough and let them rest for 10 minutes.

2. Roll each piece of dough into an oval shape of about 15cm*5cm. Place the lemon zest on the dough, roll and close the edges. Make it a circle and join the ends again. (Watch the video please) Repeat with the remaining dough. Loosely cover the shaped bagels with kitchen towel and rest for 40 minutes while you line a baking sheet with parchment paper, preheat oven to 200C, and prepare the water bath.

3. Water bath : Fill a large, wide pan with water. Whisk in the maple syrup. Bring water to a boil, then reduce heat to medium-high. Drop all bagels in it making sure they have enough room to float around. Cook the bagels for 30 seconds and flip them. Cook again for 30 seconds.

4. Remove the bagels, wipe off the water with a cloth, dip the tops of the wet bagels into the oatmeals and place them on the parchment-lined baking sheet.

5. Bake in the 200C oven until the bagels begin to brown, 15 to 20 minutes.
