#83 / Nutritious Soda Bread (Vegan & GF) / 栄養たっぷりソーダブレッド (ヴィーガン&グルテンフリー)

* 豆乳 100cc

* メープルシロップ 大1

* ビネガー 大1


* オーツ麦粉 120g (オートミールをミキサーで粉に)

* そば粉 60g

* ベーキングパウダー 小1/2

* 重曹 小1/2

* 塩 小1/2

* チアシード 小2

* レーズン 大2

* ココナッツオイル 大2

カボチャの種、ひまわりの種、胡麻 適量


1. 型にクッキングペーパーをしく。オーブンを180度に予熱する。

2. Wetの材料を混ぜる。

4. ボールにDryの材料を混ぜる。

5. 3にココナッツオイルを加え、ポロポロするよう混ぜる。

6. 4に2を加えてさっとまとめ、型に流し入れる。

7. シード


8. 180度のオーブンで30分焼く。

9. 焼けたら型から外し、布で包み粗熱が取れるまでおく。

This soda bread was made with really good & nutritious ingredients for the body.

And you don’t need to ferment so you can cook it immediately.

It's slightly dry, but not too much. You can feel the aroma of buckwheat flour and seeds.

But if you don’t like the aroma of buckwheat flour, you can make it with only oats flour.

Gluten-free and gentle for the body.

Excellent compatibility with butter.

When you add jam, more wonderful for breakfast and light meals.

The oil can

be omitted. Water can be substituted to soy milk.

In both cases, the texture will become slightly dryer and heavier.

Whole wheat flour or all purpose flour can also be substituted to buckwheat flour and oatmeal flour. It's no longer gluten-free, but much softer.

You can add more raisins if you like.

You can substitute baking soda to baking powder, but you can’t substitute baking powder to baking soda.

You can also add nuts for toppings.


Cooks in 45 minutes / Difficulty : easy

Ingredients (8*18*6cm cake mold)


* 100cc soy milk

* 1 tbsp maple syrup

* 1 tbsp vinegar (I

use apple cider vinegar)


* 120g oats flour (or blend oats till they resemble flour)

* 60g buckwheat flour

* 1/2 tsp baking powder

* 1/2 tsp baking soda

* 1/2 tsp salt

* 2 tsp chia seeds

* 2 tbsp raisins

* 2 tbsp coconut oil

* Some sesame seeds, sunflower seeds, pumpkin seeds


1. Preheat oven to 180 degrees. Put a parchment paper to the mold.

2. Mix Wet ingredients, and set aside.

3. Put all the Dry ingredients in a medium bowl and mix well.

4. Add coconut oil in the Dry mixture, mix until the mixture forms coarse crumbs. You can use your fingers.

5. Pour the Wet mixture and mix roughly.

6. Pour the batter into the mold.

7. Sprinkle some sesame seeds, some sunflower seeds, and some pumpkin seeds. Gently press the surface with your hands to prevent seeds from spilling

8. Bake at 180 degree for about 30 minutes.

9. Once done, wrap with a towel and let it cool completely.
