オリーブオイル 大1

パン粉 100cc

豆乳 50cc

茹で大豆 100g



しょうゆ 小1.5

メープルシロップ 小1/2

片栗粉 大1

塩 小1/3

胡椒・タイム・ローズマリー 各少々



バルサミコビネガー 50cc

マスタード 小1

しょうゆ 小1

豆乳 大2


  1. パン粉と豆乳を加え、合わせておく。

  2. フライパンにオイルを熱し、タマネギとニンニクをフライパンでじっくり炒める。エリンギとマイタケを加えてしんなりするまで炒める。

  3. 大豆をボールに入れマッシャーでしっかりつぶす。

  4. 豆乳パン粉、炒めた野菜、残りのパテの材料を加え、よく混ぜる。

  5. 10等分して丸め、軽くつぶす。

  6. フライパンにオリーブオイルを熱し、パテを両面色づくまで中火でじっくり焼く。

  7. (バルサミコソース)フライパンのハンバーグをすべて取り除いたら、バルサミコビネガー、しょうゆ、マスタードを加えてよく混ぜ、半量程度まで煮詰める。

  8. 豆乳を加えて乳化させる。

  9. ハンバーグにソースを添える。

  10. お好みの野菜と共に、マヨネーズを塗ったパンに挟んでサンドイッチに。


This light patty made with soybeans and mushrooms is luxurious but not heavy.

We make a balsamic creamy sauce in a frying pan that remains delicious after baking.

It's delicious not only with bread, but rice.

The sauce is also excellent with stir-fried mushrooms.


The salt content is very different depending on the salt. I use salt that is not so salty, so please adjust it according to your salt.



(vegan patty)


100cc bread crumbs

50cc soy milk (or any vegetable milk)

1/2 onion (chopped, not too finely)

2 cloves of garlic (chopped)

100g eryngii mushroom (chopped, not too finely)

100g mushroom (chopped, not too finely)

1 tbsp olive oil

100g soy beans (cooked)

2 tbsp parsley (chopped)

3 tbsp walnuts (chopped)

1.5 tsp soy sauce

1/2 tsp maple syrup

1 tbsp potato starch (or corn starch or arrowroot starch)

1/2 tsp salt

a pinch of pepper, dried thyme, dried rosemary

some olive oil

(balsamic sauce)

50cc balsamic vinegar

1 tsp mastered

1 tsp soy sauce

2 tbsp soy milk


1. Add soy milk to bread crumbs. Set aside.

2. Heat 1 tbsp of olive oil in a frying pan and fry the onions and garlic until soft.

3. Add eryngii mushroom and button mushrooms and fry until soft. Let it cool down. (You can also use shiitake mushrooms or any additional mushroom to your taste. But the taste will change.)

4. Put the soybeans in a bowl and mash them.

5. Add the soy milk soaked bread crumbs, fried vegetables and the rest of the patty ingredients and mix well.

6. Divide into 10 parts and mold into flat round discs.

7. Heat the olive oil in a frying pan and cook the patty over medium heat until both sides are colored.

8. (For the balsamic sauce) After removing the patty from the pan, use the same pan and add balsamic vinegar, soy sauce and mustard. Mix well. Boil until it reduces to half.

9. Add soy milk to prevent it from separating.

10. Drizzle the sauce ontop of the patty. Put vegetables and patty on bread and make sandwiches with vegan mayonnaise.
