YouTube recipe “Vegan Tarte Tatin” / “ヴィーガン タルトタタン”










ヴィーガン タルトタタン(15cm丸型一台分)



* リンゴ 2個

* 植物油 (ココナツオイル)大1.5

* メープルシロップ 大3


* 薄力粉 50g

* 全粒粉 10g

* 片栗粉 20g

* 塩 ひとつまみ

* 植物油 (白胡麻油)大2

* 豆乳 大1

* メープルシロップ 大1

* 飾り用ココナツクリーム 適量


1. 型にクッキングペーパーをしく。(温かいうちに型からはずせば、油分でつるっと取り出せるのでしかなくてもよい。)

2. リンゴは皮をむいて、くし型に八等分に切る。

3. 鍋に植物油、メープルシロップ、リンゴを入れ、火にかける。落し蓋をし、途中リンゴが壊れないようにそっと上下を変えながら、約30分、水分がほぼなくなるまで煮る。

4. 型にしきつめ、粗熱をとる。

5. オーブンを190度に予熱する。

6. ボールに薄力粉、全粒粉、片栗粉、塩を入れて混ぜ、植物油、豆乳、メープルシロップを加えてまとめる。

7. 型の大きさに綿棒で伸ばし、リンゴの上にしきつめる。

8. フォークで何箇所か穴をあけ、190度のオーブンで25-30分、色づくまで焼く。

9. オーブンから取り出し、冷ましてからひっくり返し、型からそっと取り出す。

Let’s make a cake with plenty of apples and less flour so you won’t feel guilty after eating.

If you eat it cold, the tart is crispy, the apples are also crispy and moist. If you warm it in the microwave, the tart is fluffy and the apples are soft and juicy. It might be hard to choose.

With a cup of hot tea and heal yourself gently.


Vegan Tarte Tatin ( 15cm round pan)


* 2 apples

* 1.5 vegetable oil (coconut oil)

* 3 tbsp maple syrup

* 50g all purpose flour

* 10g whole wheat flour

* 20g potato starch

* a pinch of salt

* 2 tbsp vegetable oil (I use white sesame oil)

* 1 tbsp soy milk

* 1 tbsp maple syrup

(For topping) some coconut cream


1. I line the bottom and a side with a parchment paper for extra insurance. You don’t have to do it because the tarte tatin does slide out quite easily when it’s still quite warm.

2. Peel the apples, cut out the core and cut them into 8 pieces.

3. Put the maple syrup, vegetable oil and the apples in a pan. Cover with a small lid directly on the apples or you can use a parchment paper.

4. Place on a medium heat for 30 minutes until all water has gone. Stir very carefully occasionally.

5. If some pieces look enough soft, remove them from the pan and set aside.

6. Take the pan off the heat and let apples cool down until you can handle them with your hands.

7. Preheat the oven to 190°C.

8. Put all purpose flour, whole wheat flour potato starch and salt in a large bowl. Mix well.

9. Add vegetable oil, soy milk, and maple syrup into the bowl and mix until just combine. Don’t kneed.

10. Put the pastry on a parchment paper, roll out slightly larger than the pan.

11. Drape the pastry over the pan. Pierce the pastry 3-5 times with a fork.

12. Bake in the oven for 25-30 minutes until golden brown.

13. Leave the tart to cool for at least 15 minutes.

14. Flip the pan upside down on the cutting board and take off the pan.

15. Cut and serve with some coconut cream as you like.
